There’s something lovely about weekdays at Chez Max. It’s a gentle hum that starts early in the morning and builds into the warm, familiar buzz of a busy lunch service. And for those in the know, plat du jour is the real star of the show—served Monday to Friday only, no exceptions.
We open our doors to the public from 8am, ready with freshly brewed coffee and a tempting selection of pastries to ease you into your day. Whether you’re heading to the office, walking the dog, or just out for a slow morning, there’s always a seat and a flaky croissant waiting. And soon, we’ll be adding a new morning menu—made for those of you who are up bright and early and fancy a proper breakfast, Chez Max style.
At 9am, the kitchen team arrives and the real prep begins. From chopping, seasoning, slow simmering, and marinating—everything’s done fresh and with care. Some bits are even started for the following day to make sure every dish has time to shine. At the same time, our managers hit the floor, balancing hands-on support with a bit of admin—lending a hand where needed, ticking off deliveries, and getting everything in line for the day. And if you happen to be around, you might catch a glimpse of Max himself, checking in or having his morning coffee.
The mornings are also delivery time—boxes of fresh vegetables from Freshpoint, top-quality Irish meat from Upton Foods, seafood from Kishfish, artisan products from La Rousse, and more from Sysco, Henderson, and Conatys. Our kitchen wouldn’t be what it is without them. Oh, and yes—the French wine arrives too, just in time for lunch. And we’re proud to say all our meat is 100% Irish.
At 11am, there’s a small ritual: the kitchen calls up the floor staff and walks them through the plat du jour—what’s on, what it’s made of, and how many portions we’ve got ready. It’s all about teamwork and making sure everyone knows what they’re serving and why it’s special.
Then the clock strikes 12, and lunch begins. From midday to 3:30pm, our regulars roll in—some ask for the plat du jour without even hearing what it is. They just know it’ll be great. That’s the level of trust we’ve built, and it means the world to us. Our weekday lunch crowd is loyal, lovely, and growing by the day.
